It was a private chef session with me, so we had time to cook together, ask questions, taste, adjust, and prepare the food by hand. The class included vegan and vegetarian Thai dishes, ingredients from my garden, and sticky rice with mango colored naturally with blue butterfly pea flower water.
I like teaching this way because Thai food is easier to understand when you can see the ingredients, cook them yourself, and learn how the flavors change as you taste and decide for yourself how you like it.

This is the kind of day I love at Thai Secret Cooking School.
A small class, good questions, real cooking, and enough time to enjoy the little details: the smell of curry paste in the mortar, the color of butterfly pea flower water, the garden ingredients, and the
first taste of food cooked by your own hands.
This class was vegan and vegetarian, but it still had the full feeling of Thai cooking: color, balance, heat, sweetness, herbs, and fresh food made together in my kitchen.
That is the secret: I like most Thai food not just for the recipe. It is something you understand better when you cook it, taste it, and share it.
