Today I enjoyed teaching a private Thai cooking class for two guests in Chiang Mai, Thailand. We spent the morning exploring fresh ingredients, learning traditional techniques, and cooking authentic Thai dishes together. While I look forward to hosting larger Thai cooking experiences with people from all over the world, private classes offer a more personal environment to connect with Thai food and its traditions. We completed and are plaiting one of Thailand’s most famous dishes, Thai green curry. After fine-tuning this ancient Siamese cuisine, we moved on to our next step: creating traditional Phat Kaphrao & Papaya Salad. Thank you for joining me today. It was a wonderful class.

On May Day in Chiang Mai, I picked these Siam tulips from my garden. beautiful flowers that many people don’t realize are actually edible. 🌿 These flowers are part of the connection between nature and Thai cooking, where fresh, seasonal ingredients play an important role.
Private Thai cooking class in Chiang Mai begins in the garden and continues into the kitchen, where fresh ingredients are prepared and cooked step by step. At my Thai Cooking School, students learn to work with seasonal herbs and fruits and to use traditional Thai techniques in a calm, hands-on environment. From tasting mulberries straight from the tree to exploring ingredients like Nam Dok Mai mango, each class connects simple moments with authentic Thai cooking. Sharing Thai butterfly pea flower iced tea together before the cooking begins in the kitchen. In the garden, we take a closer look at Nam Dok Mai mango, the variety used for Thai mango sticky rice. Even before it is fully ripe, it has its own character, and learning to recognize it is part of understanding Thai ingredients. The class begins at the local market, then the garden, where I show my students seasonal ingredients and fresh herbs. The kitchen, attention turns to the wok and preparation. Spring roll filling is carefully mixed, while vegetarian pad Thai is cooked step by step, with each stage of the process learned and mastered. :) Thai Secret Garden, we stop to taste mulberries straight from the tree. Sweet and slightly tart, they offer a simple reminder of how different fresh ingredients can be when experienced at their source.
